For the pancakes, sift the flour, baking powder, bicarbonate of soda, sugar and a pinch of salt into a bowl. Whisk the egg whites until stiff. Mix together the egg yolks, buttermilk and melted butter and whisk into the flour mixture until the batter is thick and smooth. Carefully fold the egg whites into the batter until evenly mixed.

Heat a large frying pan, preferably non-stick, and brush lightly with melted butter. Drop 2 or 3 large spoonfuls of batter into the pan to make pancakes about 10cm in diameter. When the surface has dulled slightly and bubbles appear, after about 3-4 minutes, carefully flip the pancakes over and cook on the other side until browned.

To serve, place a spoonful of the apple mixture on a pancake, top with a second pancake and spoon over more of the topping. Repeat to make three more pancake stacks.

  • 1 c. each brown rice AND gluten-free oats *
  • 3/4 c. tapioca starch
  • 1 T. baking powder (I make my own , it’s easy!)
  • 1 1/2 t. guar gum
  • 1 t. baking soda
  • 1 t. Himalayan salt
  • 2 eggs *
  • 6 T. applesauce
  • 2 1/4 c. curdled milk or buttermilk

Instructions

Preheat skillet over medium-low.

In a high powdered blender (I use a Blendtec ), grind brown rice and oats into flour. (See notes for options.)

In large bowl, whisk together dry ingredients.

In separate bowl whisk eggs. Add in applesauce and buttermilk, stirring to combine. Batter will be thick.

Stir into dry ingredients until they’re wet, but don’t over mix. ?

Pour 1/4 cupful of batter onto preheated skillet and cook until bubbly. Flip and repeat until done! Consume with joy.

Notes

If you’d rather use flours than brown rice and oats, you can substitute 1 1/4 c. brown rice flour and 1 c. gluten-free oat flour .

Pumpkin-pecan pancakes

Add 2 tsp pumpkin-pie spice to the flour mixture and ½ cup pumpkin puree to the buttermilk mixture. Stir 1 cup toasted, coarsely chopped pecans into batter. Serve with pecan honey butter: In a small skillet, melt 2 Tbsp unsalted butter. Add ½ cup pecans cook over medium-low heat, stirring, 4 to 5 minutes or until toasted. Reduce flour to 1 cup, add ½ cup unsweetened cocoa powder, and substitute ¼ cup packed dark brown sugar for ¼ cup sugar. Whisk 1 tsp vanilla extract into the buttermilk mixture. Stir 1 cup white chocolate chips into batter. Garnish with a drizzle of warm chocolate sauce or a dusting of powdered sugar.

Cranberry-orange pancakes

Add 1 tsp grated orange zest to the buttermilk mixture. Toss 1 cup coarsely chopped cranberries with 2 Tbsp sugar and stir into batter. Serve with warm maple syrup combined with a splash of OJ.

Banana-bacon pancakes (pictured)
