Beat eggs with water season with salt and pepper to taste. Spray an 8-inch non-stick skillet with cooking spray. Heat skillet over medium-high heat.
Pour in egg mixture. As mixture sets at the edges, gently push cooked portions towards center with a spatula,. When eggs are almost set on surface but still look moist, spread pizza sauce over half of the omelette.
Top with pepperoni and Mozzarella cheese. Fold the omelette in half and slide onto a warm plate. Sprinkle with Parmesan cheese.
For presentation, top omelet with a drizzle of extra sauce and a sprinkle of additional Parmesan.

Pepperoni pizza omelette
This has all the flavours of a great pizza but without the hearty carbs. Feel free to swap the pepperoni for slices of chorzio or any other favourite cured, sliced sausage.
2 balls of mozzarella (about 125g each), drained
2 tbsp fresh oregano leaves
Small handful of basil leaves
1. Heat the passata, tomato purée and garlic together in a pan over a medium heat. Reduce the heat and simmer for 8-10 minutes until the sauce is thick. Remove from the heat, season with salt and pepper to taste and leave to cool.
2. Heat the oven to 200C/ fan 180C/gas 6. In a bowl, whisk together the eggs and dried oregano and season with salt and pepper.
3. Heat a little olive oil in a 24cm non-stick ovenproof frying pan over a medium-high heat. Pour in the egg and stir until it is almost fully cooked, removing the pan from the heat when the omelette is still a little runny and wobbly in the middle.
4. Gently spread the tomato sauce all over the omelette. Cover with the pepperoni, then tear the mozzarella into pieces and scatter it over.
5. Sprinkle with the oregano, then place the pan in the oven for 8-10 minutes, until the cheese has melted and the 'pizza' is set.
6. Remove from the oven and immediately grate the Parmesan over the top. Scatter over the basil and serve at once, directly from the pan.
6 eggs, lightly beaten
1/2 Cup Grated Cheese (I used Cheddar)
4 - 5 slices Mozzarella Cheese
1/4 Red onion, chopped
5 - 6 Broccoli florets
6 Cherry tomatoes, halved
6 - 8 Slices of pepperoni, salami, chorizo or similar to your liking
6 mushrooms, sliced
1. Heat a 8 - 9 inch oven proof skillet pan with a drop of oil, then add the chopped onions, sliced mushrooms and broccoli. Cook until the onions soften.
2. Add the slices of pepperoni or whatever you have chosen. Spread the meat out all over the pan.
3. Add the grated cheddar to the beaten eggs and season with salt and pepper, then carefully pour the egg mixture into the skillet.
4. Place the slices of Mozzarella on the top of the egg mixture.
5. Place the pan under a medium heat broiler / grill until the egg mixture has set.
6. Serve warm with a side salad and some of our lovely Baked Baby Potatoes.

Denver Omelette Breakfast Pizza
Breakfast and Pizza has got to be the best combo ever! Well Next to a Denver omelette. I love those things too! So what better than to combine the flavors of both and make the best breakfast pizza ever!!
If you have the right equipment this is a super easy recipe to through together. Rather than using the oven, I used a Bakerstone Pizza Oven Box that I got on an insane clearance at target. If you caught my Instagram stories a month ago you know what I’m talking about )
Any type of pizza oven will do, it really makes a huge difference in time and the way the pizza comes out vs, the conventional oven. Your breakfast pizza will taste much more authentic!
So the omelette part? Well here’s a funny story, I was initially planning on basing this off my supreme breakfast pizza recipe, but my wife can’t stand over easy eggs right now. Some things they she couldn’t stomach during her pregnancy are still sticking.
So I quickly scrambled one of the eggs on top of the pizza and said “Got you covered babe! your side is scrambled!”
But for me, its a runny egg, loads of bacon, cheese and bell peppers all day! But its quite tasty even to have a little scrambled egg on top of your pizza, so if you’re looking to change it up a little, try scrambling the egg!
6 large eggs
1 tbsp chives, chopped
1 tsp fresh oregano, chopped
Salt and pepper to taste
1 tbsp unsalted butter
3 tbsp tomato passata
8 slices hot salami
½ red onion, thinly sliced
10 button mushrooms, thinly sliced
1 tbsp olives, halved
1 tbsp preserved artichokes, halved
½ cup shredded mozzarella cheese
1 tbsp basil, shredded
In a large bowl, whisk together the eggs with the chives, oregano and a pinch of salt and pepper.
Heat a large, heavy-based saucepan over medium heat and melt the butter, then pour in the egg mixture. Stir it around gently to help the centre cook, then evenly spoon over the tomato passata. As the egg starts to set you should be able to spread the passata evenly over the top, but don’t let it cook completely.
Evenly distribute the toppings – salami, mushroom, onion, olives and artichokes – over the top of the omelette and turn off the heat. Scatter the basil and mozzarella over the top, then place under the grill and cook until the cheese has melted and is golden brown.
Open-Face Pizza Omelette
I made my pizza omelettes with pepperoni and a combination of mozzarella and Parmesan cheeses. I used small 5-inch skillets so I'd get two very round "pizzas". A couple things I found out while testing this recipe: You don't really need the Italian seasonings in the eggs as long as you have a flavorful marinara sauce. Chop any vegetables you use into thin pieces or else they won't soften during the short cooking time. Instead of topping the skillet to melt the cheese, consider placing the omelettes under a broiler for just 1 minute. I found that to be far more effective in bringing all of the flavors together and making this omelette feel more like a pizza. (This recipe was submitted in 2002. It was tested and photographed in January 2014.)
How To Make An Open-Face Pizza Omelette
In bowl, beat together eggs, water (or milk), Italian seasoning, salt and pepper.
In a medium-sized skillet, heat oil. Add egg mixture. As egg begins to set, use a spatula to gently lift edges to allow uncooked egg to flow onto skillet. When egg is almost set on the surface, spread pizza sauce over the top. Sprinkle with cheese add toppings.
Place lid on skillet and cook for 1 to 2 minutes - until cheese melts. Slide onto serving plate.
* For the pizza toppings, consider using any of the following: peperoni, cooked and crumbled sausage, sliced mushrooms, diced bell pepper or sliced ham.
Quick and easy to make - yet all my friends think I'm some kind of a super chef when I make this one.

When I married into my husbands family, I realized that they were very serious about omelettes. My husband (and his father) have perfected the art of flipping the omelette in the pan without using any spatulas. (It has to do with having the perfect pan! They are very protective of their “egg pan!”)
I know it may seem silly to post an omelette – I mean, you can really add whatever toppings you want. But, pizza flavors are not something you usually think of with eggs!
This breakfast does not use any special ingredients, making it a frugal meal. And of course, if you are not stuck in the rut of eating eggs only at breakfast, you could have this for supper as well!
My kids really enjoy it when my husband makes these omelettes for breakfast. If you like supreme pizza, you could add onions, mushrooms, peppers, and olives. If you like more meat on your pizza, try adding sausage or bacon, along with the pepperoni. I like to add a sprinkle of oregano at the end to really give it a pop of pizza flavor.
I sometimes make my own pizza sauce. But when I’m in a hurry, or just don’t feel like making my own, I use the Great Value brand from Walmart. It has no added sugar and it is relatively low in carbs. Plus, it tastes great!
So, what do you need for this recipe?
1/2 Cup Shredded Mozzarella Cheese
