  • 3 eggs
  • 80g caster sugar
  • 90g unsweetened apple sauce
  • 45g cornflour
  • 1 tablespoon grated orange zest
  • candied orange peel, for decoration (optional)

  1. Preheat oven to 220 C / Gas 7 and lightly grease a 6 hole muffin tin (silicone if possible).
  2. Put butter and chocolate pieces in a microwave safe bowl with a lid; cover and melt in microwave for 1 minute. Mix till smooth.
  3. Break eggs into a large bowl and add sugar; whisk to dissolve. Add apple sauce, melted chocolate mixture, cornflour and orange zest. Mix together until smooth.
  4. Pour mixture into prepared muffin tin and bake 7 to 10 minutes in preheated oven (depends on your oven). Remove and let cool at least 5 minutes before unmoulding. Decorate with orange peel (if using) and serve.

“Oh, well, finally…!” I said to myself.

It has taken me a good while to come to posting this orange jelly mini cakes recipe which is one of my top favourite treats. I almost called the recipe homemade Jaffa cakes but they are not quite as the ones in the shop, they are a few million times better and I say that only because they have no nasty additives in them.

Folks, you may not quite believe this but these are soo easy to make (despite the kilometric recipe) and they only require 5-6 ingredients, depending on whether you choose to use a ready-made jelly or make your own… But either way, it is still a small number of ingredients that you will need in order to make these beautiful treats and put them on the table.

With this recipe, you can easily prepare 24 cakes and yes, I did dare to say, it serves 8 people, but that is not the reality in my household, the reality is that it hardly satisfies four – I always need to sacrifice myself and get my portion tucked in by two little munchkins.

Kids… hey… such sweet little smashers – they do make these mini cakes disappear in seconds, so if I ever want some left, I need to go double portion.

So I have to say that I made some major changes to use what I had on hand, so only rated this 3 forks- I used pre-crushed graham crumbs instead of chocolate wafers and lemon instead of orange. That said this was super easy and really good. I made them for a 'party' of 4 and all were eaten. I was skeptical that the crust would hold up but it was perfect even tho I forgot to butter the tins. I will skip this step again as a result. Really good with changes- not sure I would use chocolate and orange now.

I loved the taste of this recipe. I added more orange than it called for and it turned out great. However my crust completely fell apart when I went to eat them. Make sure you crush the cookies small enough and add a little more butter than called for.

Not worth the effort! I was looking for something cute, fast and yummy for a wedding shower and these only hit on cute. Definitely not cheesecakes, crusts were too thick and even though I filled them very high, the ratio of crust to filling was off and I had half a ziplock of filling left overover. Needless to say these won't go into the repeater file!

Being one who always likes to think out of the box and do usual things in an unusual way this recipe is great. I made them for a birthday party and substituted a full size cupcake pan instead. I made this to bring to a recent tailgate party and it was a huge hit. So easy too. I used Oreo cookies, 9 of them, plus the butter and sugar as called for, and pressed them into buttered mini-muffin tins. Them came out easily when I just flipped the tin and banged on the bottom of the cups. I set the cookie cups aside in a container, and put the cream cheese filling into a sandwich baggie to cool, and then just filled the cups hours later by snipping the corner and piping the filling out. It was delicious. I do agree it's a tad too sweet though, and next time Iɽ use a hint less sugar and orange peel in the filling and a little more grand Marnier. I added about a half tablespoon.

Cookie base did not turn out and the filling was much too sweet. I ended up going to the bakery as plan B. My sister made them on the same day for a separate event. They didn't use them either.

The only part of this recipe that I liked was that visually they looked great but they certainly were not worth the time at all! This proved to me that anything called a cheesecake should be baked to taste great.

I made these for my supper club. Instead of making them in mini muffin tins, I used full-sized ones. I doubled the chocolate crumb part, and used some mini chocolate cookies that I found at the grocery store and ran through my food processor to make the crumbs. I sprayed the muffin tins really well with PAM. I cooked them a little longer, and after letting them cool for a bit and breaking one, I found that turning the muffin tin over and banging on it a few times with my fist released the cups nicely. I doubled the filling recipe and had plenty. I added orange liqueur, too. I spooned the filling into a gallon-sized ziploc bag and cut one corner to make my own pastry bag. They were the perfect size for dessert, and everyone loved them. Easy to make, too!

I made this recipe for a dinner party and everyone loved them. I have an old pecan tassie pan that is not non-stick, but with a lot butter and using a knife, I was able to get them out of the pan. I used a healthy 1/2 teaspoon of orange rind in the filling and made a double recipe of the crust. Unlike everyone else though, I didn't have enough filling for 24 cups (only about 19). If you use a pastry bag you can fill the cups pretty high, which is why I probably didn't have enough for all of the cups. I'll make this recipe again.

These are the most finicky things I have ever made. The side crusts did not hold up at all which made it difficult to imagine the bottoms holding the filling. So, I gathered up 5 creme caramel dishes (I needed 5 desserts), buzzed the baked cookie crumbs, divided that up amongst the dishes, pattted the crumbs down, distributed the filling between them, topped them with chocolate curls and then with candied orange peel that I had made. The filling tasted delicious, they look lovely and I would likely make them again the way I just described. I will never tackle the recipe again as written. The three forks are for taste - it lost a fork out of my frustration with the recipe.

I am a caterer and make these regularly on dessert trays. Always a crowd pleaser. One of my clients calls them "adult oreos". For the crust, I buy Oreo crumbs, already crushed. I do have extra filling as I usually use a shallow tassie pan. I just double the crusts and have never had an issue with them not releasing from the pan. Simple and elegant.

I'll admit that I'm no Julia Child--so I'm always looking for a simple recipe that looks fancy. These were absolutely delicious! Everyone loved them--they are so cute and bite-sized. You can indulge without going over the top. Just don't leave them out if it's warm because they get a little runny.

Just to answer the question posed by the cook in France, grahams are actually the American version of the digestives and as for the chocolate just use any good quality chocolate chips or Varlhorna choclate 70% and above if you choose to do it without the biscuits. Oreos are by the way the best cookie ever. It's almost black in color and is sandwiched with a white cream. I hope this helps.

To the cook from Bordeaux, any hard chocolate biscuit will do. You can even use ones that are sandwiched together with chocolate or white filling (that's what an Oreo is). Also, probably any chocolate chips will do (the higher cocoa content the better).

This recipe sounds delicious and just what I need for this week-end, but I'm having trouble with one of the main ingredients. I come from Scotland but live in France and I just don't know what is meant by Nabisco's chocolate wafers, Guittard semi sweet chocolate chips, oreos or chocolage graham crackers. Can anyone suggest something ?

I looked at the reviews about the crust, so I decided to change it. I used a 6 oz. pkg. of Guittard semi-sweet chocolate chips and 1 tsp. butter. Melt the chips and butter (stir after 20 seconds in microwave, then keep checking.) I poured a small amount in the (Pam sprayed) cups and used the back of a small spoon to spread up the sides. Refrigerate at least 15 minutes, then gently remove the shells. I used Triple Sec in the filling, which has an orange flavor to it. Fill the shells and pop them back into the fridge. I served these at a catering function. They were gone in no time. Fabulous

I haven't made many recipes with an orange and chocolate combination, but I’ve tried other Ina Garten recipes that were good, and this one didn’t disappoint. This Bundt cake is easy to prepare, very moist, and the orange flavor produced by the zest and the addition of the orange sugar glaze was just right. Although the cake is good alone, the addition of the ganache makes for a nice presentation and a really decadent dessert.

The recipe calls for “good” semisweet chocolate chips. I used Nestle’s semisweet chips and think it turned out well, but I am sure “good” chocolate would be even better.

I think these would make some cute cupcakes as well, perhaps I’ll try that next time.

My family adores the combination of chocolate and orange, so of course we had to try this recipe. What we found is that this cake finally helps you decide which ingredient you want to stand out more: the chocolate or the orange. I used fresh oranges for the orange juice and zest, and they added a lovely orange flavor.

The cake is dense, and the fruity taste lightens it. The chocolate chips add just enough chocolate to every bite. Then the orange syrup provides a burst of fruitiness that also creates a tiny crunch along the outside of the cake. When I make the cake again, I'll stop there and not add the ganache, purely because our household enjoys orange with a bit of chocolate more than chocolate with a bit of orange. We may even add candied orange peel either mixed in with the chocolate chunks or sprinkled over the top.

As written, with the ganache and chocolate chips, the chocolate is the stronger flavor. While beautiful dripping over the cake, the ganache is very rich and can overwhelm the orange. I plan to save the ganache recipe to enjoy with other cakes.

I tested this cake to bring to a friends house for a girls-night dinner and it didn't disappoint! This cake got rave reviews for its moist and tender crumb, fresh orange flavor, and the hits of chocolate. The orange glaze drizzled over the top really does impart a wonderful flavor component as well as adding to the moistness of this cake. Everyone also agreed that the spattering of chocolate chips in the cake and the drizzle of ganache over the top served to accent the cake nicely, while not overpowering it with a chocolate overload. While this cake may have a number of steps to its final completion, it’s well worth the complements you will receive. We all gave this a thumbs up, and for this group of ladies, that’s true praise indeed.

All the instructions were easy to follow and the only issue I had was that the top was getting very brown at 45 minutes, but was still not done. I tented the top with foil to avoid burning until the cake tested done at 54 minutes. I also don't own a stand mixer, and don’t have a paddle attachment for my electric hand mixer, so I just used the beater attachments to cream the butter and sugar for 9 minutes until it was very light and fully, and then proceeded with the recipe instructions.

This fun Easter cheesecake has a hidden Mini Egg surprise!

Ingredients

  • 140 g unsalted butter
  • 300 g digestive biscuits
  • 600 g cream cheese
  • 100 g icing sugar, sifted
  • 200 ml double cream
  • zest of 3 oranges
  • 75 g Mini Eggs (plus extra to decorate)
  • 200 g milk chocolate

Instructions

  1. Make the biscuit base by melting the butter in a pan on the hob. Break up the digestive biscuits and blitz in a food processor until they reach a fine crumb consistency. Add the melted butter and blitz again until combined.
  2. Press the biscuit base firmly into a round springform tin (I used a 23cm one) and chill in the fridge while you make the cream cheese filling.
  3. Beat the cream cheese and icing sugar together in a bowl. In another bowl whisk the cream until it forms soft peaks and then fold into the cream cheese mixture. Stir in the majority of the orange zest, keeping back a little to decorate.
  4. Spoon half the cream cheese and cream mixture over the biscuit base and smooth with the back of a spoon. Drop the Mini Eggs randomly into the cheescake and spoon over the remainder of the mixture, again smoothing it with the back of a spoon. Cover with cling film and chill in the fridge for at least 4 hours.
  5. After 4 hours (or more), melt the chocolate in a bowl over a pan of boiling water and leave to cool for a few minutes before spreading over the top of the cheesecake. Work fast as the chocolate will begin to set quite quickly. Decorate with the remaining orange zest and extra Mini Eggs while the chocolate is still soft.

Notes

If you want to chill the cheesecake before serving, allow it to come to room temperature before you cut it into slices as the chocolate topping will be quite hard.
