Sadly summer has come to an end, but that doesn't mean you can't still enjoy all the flavors it has to offer. Beluga Vodka sent over this cocktail recipe that is bringing back our fondest memories of summer.

Ingredients

  • 1 Ounce Beluga Noble Russian Vodka
  • 2 Tablespoons peach pureé
  • 1 1/2 Ounce peach brandy liquor
  • 3 1/2 Ounces hot water
  • 1 maraschino cherry

Directions

Combine all ingredients in your favorite tropical glass, garnish with a maraschino cherry, and enjoy!

10 Summer Recipes I Want to Try

Happy Thursday, friends! I’m taking tomorrow off because Emmett is off work for the holiday weekend and we’ll be tackling house projects (the shed and guest room), but before I sign off for the long weekend… I wanted to share 10 summer recipes I’ve been itching to try. If you’re looking for something special and seasonally appropriate to make this weekend, maybe some of the recipes I’ve saved will provide some inspiration. We haven’t quite nailed down what exactly is on our menu this weekend- after all, it’s just the two of us (unlike last year when we hosted a backyard BBQ), but I pretty much use every holiday as an excuse to eat good food and make cocktails. Click through for the 10 summer recipes I want to try this month!

I’ll begin by saying Emmett I don’t adhere to a special diet or anything. We pretty much eat anything and everything (excluding shellfish for me because I have a food allergy), but I’m sure many of these recipes could be modified to fit your specific dietary needs or preferences. I like to use recipes as a guideline anyway. Cooking is another opportunity to be creative! Emmett, on the other hand, sticks to the recipe EXACTLY. What is your cooking style? Creative or calculated?

#1 // Lemon Flatbread Pizza

On Fridays, we make homemade pizza- we even bought a beautiful pizza peel that hangs in our kitchen. This is the recipe we’re going to try tomorrow and I am SO excited. Burrata, mozzarella, roasted broccoli, lemon zest, bacon, and greens… all sprinkled with fresh parmesan. Doesn’t it sound like a dreamy combination? I’ll be sure to let you know what we think, but I’m assuming this is going to be a summertime favorite.

#2 // Rhubarb Crisp

Rhubarb reminds me of my grandma. She had a huge patch in front of the barn on her farm, and we’d harvest it and make rhubarb crisp, rhubarb pie, rhubarb jam, and alllll the tasty things. I even used to eat it straight from the stalk (not for everyone, I know). I have such fond memories of rhubarb and the summertime deserts are my favorite because of the flavor and nostalgia. Vallery’s recipe looks just like my grandma’s and I can’t wait to recreate it! Now… to find rhubarb. I’ve never purchased it from a grocery before. Any tips?

#3 // Homemade Pretzels with Cheese Dip

Homemade pretzels are a fan favorite in our house. When we lived in Ohio, I surprised Emmett with a culinary class (in an effort to shake up our weekly date nights). We took a series of classes from a prestigious cooking school that involved pretzel making and beer pairing. We made jalapeño stuffed pretzel bombs, rosemary pretzels, dessert pretzels sprinkled with cinnamon & drizzled in dark chocolate, and of course the classic version with cheese dip. I stumbled across this recipe and it inspired me to recreate our pretzel making, beer pairing days! It really is a fun summer activity, and since we can’t get our favorite soft pretzels at sporting events this summer (we love baseball games), we might as well make them at home.

#4 // Grilled Chili Chicken Tacos with Tomatillo Salsa

I truly haven’t met a taco I didn’t like… besides maybe a shrimp taco, because of said food allergy. These blackened chicken tacos look incredible! They also seem to be bursting with flavor and include so many delicious ingredients, like: pepper, lime, coconut, tomatillo, onion, cilantro, pineapple, jalapeño, avocado, and of course you can choose your favorite tortilla (my preference is corn tortillas).

#5 // Hot Honey Chicken

My family lives in Kentucky… I grew up in “the south”, if you consider it that (I do, Emmett does not). Anyway- given the close proximity to Tennessee, I LOVE some good, authentic hot honey chicken. That sticky, sweet, spicy sauce gets me every time. Is it really summertime if you don’t have fried chicken a time or two? This recipe is technically oven-fried, but I bet you could use an air frier too. Tieghan’s recipe calls for crispy corn flakes and honey butter sauce, so you know it’s going to be good. This is making me very hungry!

#6 // Melon and Cucumber Mint Feta Salad

I’m a big fan of eating melon in the summertime… for breakfast, for lunch, as a snack, basically whenever. Cantaloupe is my favorite, followed by watermelon and honeydew. This recipe makes a beautiful presentation! It looks so gorgeous on that serving platter. Well done, Naomi!

#7 // Banana Cake with Peanut Butter Chocolate Frosting

I have a major sweet tooth (if you haven’t noticed), so this banana cake is really calling to me. I’m pretty certain I could live on banana bread alone, but Jenna turned it into a cake and added chocolate peanut butter frosting for the ultimate dessert… or breakfast, if you like sweets in the morning like Emmett and myself.

#8 // Avocado Grapefruit Salad

I had to throw a salad in here for good measure. Haha! Fun fact… of all the fruits, grapefruit is my ultimate favorite. I eat them often, but never put them in my salad. No idea why… I think it’s time to change that! This salad looks refreshing and also includes avocado, shallot, balsamic, fennel, mustard, plenty of greens, and cheese. It seems like a winner I’ll be trying this weekend!

#9 // Mediterranean Nachos

Ahhh, nachos! I’m a super fan of nachos. I like the concept… how you can load them up, mix up the flavors each time, and how easy they are to pile onto a plate. These Mediterranean nachos look ideal for summer! Pita, chickpeas, sun dried tomatoes, olives, peppers, feta, onion, and parsley… sounds like a winning combo to me. I can’t wait to try them!

#10 // Spicy Grilled Pineapple Margarita

I know, I know… it’s not food, BUT- you know I love a good margarita (get my frozen recipe here and my pitcher recipe here). Since it’s a holiday weekend, you better believe we’ll be having celebratory cocktails. I’ve decided this will be the drink- spicy margaritas with grilled pineapple. I’ll report back, but I’m very excited to try these.

Southern-Style Cornmeal Catfish with Tomato Gravy

Fried fish has always come across tables as a dinner standard, but it gets harder and harder to find fried catfish on the menu at most dinners. This recipe will make you remember why this economical fish was such a favorite, and it will evoke memories of fish fries and summer days. With a crispy cornmeal crust and an easy frying technique, this recipe is achievable for any home cook.


The recipe:

Yakisoba

Ingredients:

  • 3 eggs
  • 18 shrimp sliced in half horizontally
  • ½ pound (2 pieces) boneless chicken thighs (optional)
    • 2 tbsp teriyaki sauce
    • 2 teaspoons cooking sake
    • 1 pinch of dashi powder
    • 1 teaspoon of corn starch

    Directions:

    1. Whip eggs in bowl and add pinch of salt and pepper. Heat vegetable oil in large saucepan. Add enough egg to cover pan in thin layer. Cook until egg has set, then flip and cook for additional 1 minute. Try not to brown the eggs. Remove from pan and repeat with remaining egg. Let cool and thinly cut into 3 inch long strips.

    2. Heat vegetable oil in a wok on medium low heat and saute shrimp for 3 to 4 minutes. When cooked through, remove from wok and place in bowl.

    3. Cut chicken into bite-sized (approximately 1 inch) pieces. In a medium-sized bowl combine chicken with 2 tablespoons of teriyaki sauce, 2 teaspoons of cooking sake, a pinch of dashi powder, and 1 teaspoon of corn starch. Mix together thoroughly and let marinade for 15 minutes. Heat vegetable oil in wok on medium heat and saute chicken until cooked through, about 8 to 10 minutes. Top with splash of unagi sauce. Remove from wok and set aside.

    4. Add remaining oil and fresh ginger. Saute for about 1 minute or until until fragrant. Add cabbage and carrots, and saute for an additional 8 to 10 minutes. Add green onions and mushrooms and saute for 2 to 3 minutes.

    5. When the vegetables are almost done cooking, heat a pot filled with about an inch of water until hot. Add yakisoba noodles and gently loosen. Do not overcook the purpose of this step is only to loosen the noodles. Drain from the water once loosened.

    6. When vegetables are cooked and soft, add shrimp, chicken, and noodles. Sprinkle powdered sauce into the noodles until dissolved and evenly distributed, being careful not to break the noodles.

    5. Serve yakisoba in a large bowl. Top with sliced egg, sesame seeds, beni shouga and kizami nori.

    One of the best things about summer is all of the food that comes along with it: barbecues, ice cream trucks, and, of course, beachfront restaurants. Restaurants located on or near the beach serve some of the most classic warm weather food that will instantly make you think of long days spent by the ocean, but it's going to be harder than usual (even impossible in some areas) to grab your favorite hushpuppies and shrimp.     Roasted Garlic Tomatoes – Perfect Holiday Appetizer

    These tomatoes are such a versatile flavor. The garlic and the oil combined with the tomato juice that bursts out in the oven combine to make a delicious cooking liquid too. When I make this to store, I absolutely save all the liquid from the pan and add it to the mason jar I keep them in. The roasting of the tomatoes intensifies the flavors and makes them super sweet. Try them and I promise you’ll be a convert and you’ll have them in your fridge at all times!

    Things you can do with these tomatoes:

    • Top them on some crostinis
    • Add it into your favorite pasta (I add it to my Alfredo Pasta)
    • Add it to Shrimp Scampi
    • Add it on top of grilled chicken or steak
    • Add it to your favorite sandwiches in place of sliced tomatoes
    • Add to risotto or as a topping on your favorite baked pasta
    • Blend with olive oil and champagne vinegar for an amazing vinaigrette

    Right now the local stores are still having great prices on grape tomatoes. In case you can’t find them easily, a good place to try is Trader Joe’s. They have them year round (I know this because my oldest is completely obsessed with grape tomatoes) and the prices stay pretty constant.

    So without further ado, here is the easiest recipe you’ll be glad you pinned (You are pinning this right?)

    Preheat oven to 400 degrees.
    Toss all the ingredients except the Parmesan cheese into a bowl together. Put onto baking sheet and bake for 8-10 minutes.

    Optional, but I usually top it on a crostini (French Bread slices that are brushed with a little olive oil and toasted) and some Parmesan cheese, because, well…. this!

    Tips and Tricks for Cucumber Salad :)

    • You'll find that when you serve this, everyone wants this "German Cucumber Salad recipe", so be prepared to give it out. Adults and kids alike just love the taste and the creaminess. 

    • English Cucumbers? If the skin is nice and thin, don't bother peeling them. Leaving the peel looks pretty in the salad and is healthier. Lecker!
    • Some people remove the seeded center part of the cucumber to help remove some of the water. I don't. I love using the whole cucumber. It's healthy. Why throw some of it away?

    • However, if you wish, you can make it hours ahead -- you just need to make it a bit differently then. The "problem" is that cucumbers are quite watery and if the dressing is added early, the water is "pulled" out of the cucumbers and the dressing is diluted.
    • To do this, you slice the cucumbers thinly. Put into a bowl and sprinkle them with salt. Stir. Let sit for about one hour. The salt will draw out some of the cucumbers' water. Drain well just before using and add the dressing to which you have NOT added salt. Rather taste the final salad before adding extra salt if needed.
    • If you want to pre-make the salad, you can pre-slice the cucumbers very thinly. Then, leave them covered in a bowl in the fridge. Make the dressing and refrigerate it as well. Combine just before serving.
