I have to tell you that I love Mary Berry's recipes and recently I saw in one of her shows a loaf cake recipe with apples and cinnamon. It's impossible to go wrong trying to reproduce her recipes, so here's my version of apple loaf cake and apricot jam topping. :)

It's a delicious cake, a perfect combination of sweet and sour, soft and fluffy and it cooks extremely fast, but let's see how it's made, I say. :)

I couldn't resist the temptation to share this apple cake recipe with you. I was inspired by a recipe for slow cooker I tried for some time. I modified it and tested it so that it was to my taste, and I hope to your taste as well. What is wonderful about this apple cake is that it does not use flour at all. Yes, you heard right! No flour! I know that the poor supply of flours accepted in the autoimmune protocol is a problem when you want to prepare something good. And this recipe has something great: only easy-to-buy ingredients are used at any time of the year. And did I mention that she is vegan and fasting?

Normally, if you want to prepare this apple cake, you only need the 3 basic ingredients: apples (preferably some sweet and sour), bananas (well cooked, to be sweet) and coconut flakes. pay attention to the label! avoid traces of gluten). But to be super tasty, I recommend you prepare it with all the ingredients listed. You will not regret!

To bake it I used a round shape with removable edges with a diameter of 17.5 centimeters. If you want to prepare it in a normal tray, I recommend using baking paper. This will make it easier to remove without breaking.


And now, in order not to make everything so rosy, I must mention the fact that in this diet a high consumption of sugar is not recommended, being it even only from fruits.
