teaspoons vanilla bean paste or vanilla
teaspoons pumpkin pie spice
cup Cascadian Farm™ Organic Granola Dark Chocolate
Microwave sweet potatoes until tender, about 5-7 minutes. Remove and allow to cool. Discard peel and dice sweet potato. Place in a blender with peaches, orange juice, maple syrup, vanilla and pumpkin pie spice.
Fill two glasses halfway full with smoothie. Spoon about half of the yogurt into the center of each smoothie. Pour smoothie on top, leaving about 1” at the top of each glass. Drag a paper straw up and down the edges of the glass to create a decorative look.
Top with remaining yogurt and granola.

More About This Recipe
- Smoothies are fabulo fantastic for summertime. Cool and berryish, these chilly sippers are refreshing as all get out during the hot months. They’re great way to get your greens and fruits in.But smoothies in the autumn? Not so much. As the season turns and the temps turn cooler, comfort food takes the front seat. And it’s easy to find yourself living on golden pot pies and renaissance fair-sized turkey legs. Or whatever. You see where I’m going with this. Fall eats are all about hearty, hot foodstuff things.Still, your body begs daily for the good stuff. So why not give that classic jar o’ fresh-blended smoothie an autumnal twist, inspired by the utterly irresistible sweet potato casserole of Thanksgiving fame.Don’t be freaked. No matter how wild this sounds, this smoothie is about to become the best autumnal breakfast you’ve ever blended. I made one batch (two servings) and ended up drinking them both by myself. I kid you not. This smoothie is sweet potato perfection! That yogurt. That granola crunch factor. This smoothie. It may the single best part of autumn eating ever.
